Apam Cantik Manis

I made apam cantik manis, thehehe..

I'd this craving of making 'apam cantik manis' since I first saw the recipe in 'The Star'.

Untuk orang yang tak pandai masak macam saya, bestnya, dapat buat benda, jadi!

Ingredients
1 egg – slightly beaten
120g castor sugar (I used normal white sugar, and then blend it till fine)
120ml of 7Up, Sprite or ice cream soda
1/2 teaspoon vanilla essence
155g (5oz) flour (I used self-raising flour instead, since that's the only flour available)
Food colouring (didn't use this..stok dah habis)
1 tablespoon castor sugar
paper cups
grated white coconut

Method

Get the steamer ready. Beat eggs till fluffy and add sugar. Beat till thick. Fold in the flour slowly and pour in the fizzy drink. Add vanilla essence.

Set aside 3 tablespoons of mixture and add the food colouring. Scoop the plain mixture into the paper cups and add a bit of the coloured mixture on top. Fill about three-quarters of the cup, giving the kuih space to rise.

With the extra castor sugar, make a cross on top of the mixture. Steam for about 15 minutes. Serve with grated coconut
